Grandma Tillie's (Addictive) Triple Layer Bars

This is a recipe courtesy of one of our favorite Winter Park Farmers Market customers, Mark Davids. He enjoys using our Spoon Fruits in his treasured family recipe, handed down throughout the generations. Mark said, "I can't be responsible for any addictions caused by this recipe!"
Ingredients
3 eggs
½ cup sugar
½ cup oil
½ tsp vanilla
3 cups sifted flour
2 teaspoons baking powder
⅛ teaspoon salt
Filling
1 cup pecans or walnuts, chopped
½ cup sugar
2 teaspoons cinnamon

Mix together the nuts, cinnamon and sugar. Set aside.
In a medium bowl combine eggs, sugar, oil and vanilla. Beat until just well blended.
Into a large bowl add sifted flour, baking powder and salt. Make a well in the center and add the egg mixture. Stir with a wooden spoon until well mixed.
Turn the dough onto a lightly floured board. Knead until smooth, about 5 minutes.
Divide dough into 3 equal portions. Roll each portion out into a thin rectangular sheet. Place first sheet into a jelly roll pan lined with parchment paper.
Spread with a thin layer of the spoon fruit. Sprinkle with cinnamon-nut mixture.
Cover with second sheet of dough. Spread with spoon fruit and cinnamon-nut mixture.
Cover with third sheet of dough. Sprinkle lightly with cinnamon and sugar.
Bake in 350-degree oven for 30-40 minutes or until golden brown. Cool on wire rack for 5 minutes. Slice into bars or square cookies while still warm.
