Spoon Fruit Cobbler

Cobbler
4 Tbs. butter
3/4 cup flour
3/4 cup sugar 
1/8 tsp. nutmeg
1/4 tsp. cinnamon
1 tsp. baking powder 
1/4 tsp. salt 
3/4 cup milk 
1/2 Tbs. vanilla
1 (8 oz.) jar of Heavens to Betsy Spoon Fruit

Topping
​1 stick (8 Tbs.) softened butter
1 cup flour
1 cup brown sugar

Directions
​Pre-heat oven to 350 degrees.
Use upper middle oven rack.

Use an 8-inch cake pan or square pan.  
(Note: If you double the recipe, you can use a 13-by-9-inch corning/pyrex baking dish.)

Place butter in the pan and melt it in the oven.

Mix the cobbler dry ingredients. Then, add the milk and vanilla and mix it into a smooth batter.

Remove the pan and melted butter from the oven. Pour the batter over the melted butter. Top batter with Heavens to Betsy Spoon Fruit .

Place cobbler in the oven and cook for 15 minutes. While cobbler is cooking, assemble and mix the topping. (I use my fingers and mix thoroughly!)

Add topping to the cobbler and return to oven for the remaining 35 - 45 minutes, depending on your oven.  

Total bake time will be 50-60 minutes until the batter browns and the Spoon Fruit bubbles and topping is brown and crisp.

Serving Suggestions 
Top with whipped cream or with a scoop of vanilla ice cream. Also (as pictured) sprinkle with ground cinnamon and garnish with fresh mint leaves.
